A Sweet Fragrant Taste With Light Tang Of Menthol And Citrus

Linden Honey also known as Lime blossom in UK and Basswood honey in Northern America. Lime tree honey is produced from the nectar of lime-tree flowers called Tilia.

This mono-floral honey has a distinct flavour compared to most blossom honeys. Usually dark honey is known to be stronger however Linden honey does not follow that rule despite its light golden colour.

Honey from Linden trees are known to be exceptional and have been used throughout pre-Christian era. It has a wonderful sweet fragrant taste with a slight bitter after taste, includes a light tang of menthol, woody and citrus notes. This honey will completely change the minds of those that think honey just tastes like sugar mixed with water.

Colour: Light amber to dark orange, colour can change to a lighter colour when setting.

Production Area: Maramures, Northern Romania. Maramures very culturally rich and is regarded as Romania's most traditional region. It is known for its impressive landscapes and it’s ancestral farming culture.

Uses: In Eastern Europe, it is widely used in the treatment of sore throat, rhinitis, and laryngitis. It can be used as dessert toppings and great to use in herbal teas.

Botanical Origin: Lab Analysis shows presence of Tillia pollen of 82%. A common technique that is used to determine mono-floral honey is the study of pollen. Every honey has a little bit of pollen which gets in with the nectar. These pollens can be analysed to identify what plants the bees collected nectar from. Honey can be considered as lime honey if it contains approximately 80% of lime pollen.

Did you know?

An approximately 500 years old years-old linden tree can be found in Copou Park (Iasi – Romania), also called ‘The Lovers Tree’. It has become a favourite spot for romantic lovers from around the world. A famous poet allegedly Mihai Eminescu (1850—89) wrote under the tree.

 

Honey and Crystallisation

Crystallisation is a natural process with honey so please do not be alarmed. Most supermarket honey does not set as quickly due to high heat processing and rapid cooling which keeps the honey runny for longer. 

If your honey is set, you can make it runnier by placing it in a pan of hot water for about ten minutes (and repeat as necessary). Please store it in a warm place in the household but away from direct sunlight.
